My 1st year Ricks College I wasn’t prepared for a real winter.

It was a day like today the Wednesday before Thanksgiving, like today it was cloudy in the early morning hours and about 8 am it started to snow.

One of my friends, Kevin had invited me to have Thanksgiving at his home in Carbon County Utah, but the storm then like today was a big one.  Kevin called and said he had a full car sharing gas money but with the storm we needed to leave ASAP.

Everyone gathered about 10:30 and we were off, driving south and in that short two and a half hour span the roads were awful.  Kevin was driving near Rigby and we did a 360 but we just kept diving and the 8 hour trip to Carbon county wound up to be almost 13 hours.

So when I read the forecast at 5am this morning I had a flashback to my 1st real winter storm

Pecan-Pumpkin Pie

3 eggs

1 cup dark corn syrup

1/2 cup sugar

4 tablespoons butter, melted

1 cup canned pumpkin

1 teaspoon vanilla

1 cup pecans, chopped

1 9-inch deep pie shell

Preheat oven to 350 degrees. With a hand beater, beat eggs well. Beat in corn syrup, sugar, butter, pumpkin and vanilla until well beaten. Arrange pecans in single layer in bottom of pie shell. Slowly pour egg mixture over pecans. Bake 1 hour or until knife inserted 1 inch from edge comes out clean,
